Viceroy Snowmass, located in Snowmass Village, CO is looking for an Executive Sous Chef to join our team. The Executive Sous Chef position reports to the Executive Chef. If you enjoy working as a part of a team and have a motivated and positive attitude, we would love to meet you!
Duties Include:
- Assist in efficient running of the Culinary operations to include but no exclusive to Toro Restaurant, Nest Grill, Room Service and Café V.
- Ensure adherence to Company Culinary and Food Safety standards as well as compliance of Food Handling laws of Colorado.
- Ensure Culinary services meet and exceed guest expectations.
- Knowledge of purchasing, inventory controls, suppliers and equipment.
- Assists in keeping the Culinary and Stewarding teams focused on guest satisfaction and desired financial results.
- Ensures food production occurs according to operating and quality standards.
- Ensures compliance of Company sanitation standards.
- Maintains an effective training and inspection program of all Culinary areas to ensure compliance of Health and Safety procedures and local laws.
- Oversees Stewarding cleaning schedule and manages execution of work.
- Understands and communicates to colleagues the operating and maintenance procedures of all departmental equipment.
- Assists in the evaluation and implementation of new cooking techniques, supplies and equipment.
- Maintains a strong working relationship with all departments to ensure effective communications for operational issues.
- Assists in the coordination of special needs of VIPs, Groups and Amenities.
- Assists with the overseeing of the Kitchen and Stewarding operations to manage costs and quality.
- Assists in menu production, quality control and managing pricing of such.
- Coordinates with Engineering on kitchen maintenance needs.
- Ensures effectiveness of on-going kitchen and related maintenance.
- Reviews and monitors implementation of energy conservation programs where applicable.
- Ensures that all colleagues of the Culinary and Stewarding departments understand and comply with Loss Prevention policies to prevent accidents and control costs.
- Ensures that food preparation and set-up is ready for food service.
- Assists in the hiring, development and retention of a diverse workforce to deliver excellent products and services.
- Sustains a work environment that focuses on fair and equitable treatment and colleague satisfaction.
- Ensures colleagues receive on-going training to understand guest expectations and how to achieve and exceed them.
- Manages food cost as per Company standard and budget and details monthly critique on such.
- Utilizes a labor management system to effectively schedule according to business demands and for tracking colleague time and attendance.
- Monitors and manages the payroll function.
- Understands the impact of Culinary operations on the Food and Beverage area and overall hotel financial goals and educates colleagues on details as appropriate.

Schedule: Flexible schedule, weekends and holidays required
Pay Rate: $85k to $95k

Minimum Requirements
- High School Diploma or equivalent required; Degree preferred.
- Culinary training/certification required.
- Minimum of 5 years in similar position at a fine dining restaurant and/or luxury resort property.
